Cooking in an RV has its drawbacks so I am always on the lookout for recipes I can make with ease and shrimp scampi is one of them. This is one of my favorite meals to make because there is nothing to it, and it can be reheated so I usually make a double amount.
This is an easy recipe to mess around with. For instance I always add lots of vegetables to mine because I have a growing boy I am trying to fill up daily. Whatever is in the refrigerator can be added to beef up this delicious recipe.
This meal can be reheated easily and quickly so when we get home late from a day of hiking, it doesn’t take me long to get dinner on the table.
This is one recipe that all of us enjoy, including my somewhat picky daughter.
I usually pick up a large bag of medium shrimp when I bulk shop at Sams Club, I also pick up a large batch of Angel Hair pasta while I’m there. Then all you need is a jar of pesto sauce and a few other things.
1 lb of medium shrimp (I get the precooked ones and then just pull the tails off)
8 oz Angel Hair pasta
1 tbsp Butter
4 Cloves of minced garlic (I purchase a large container of minced garlic at Sams Club and keep it in the fridge. We use it regularly so it doesn’t go to waste)
1 Drop white wine (I use zinfandel because we don’t drink white)
1/2 Package mushrooms
1 Jar basil pesto
Juice from a lemon
1 Can 8oz Sweet corn
10 Grape Tomatoes
1 Small pepper chopped (any color you want)
3 Green scallions
2 tbsp Parsley
Get the water cooking for the pasta
Add the butter and garlic to a frying pan and let it cook for a couple of minutes
Start cooking the pasta according to directions
Next add the pepper and mushrooms and mix them up, now add the shrimp.
Add 6 tomatoes and cook the shrimp for 3 – 5 minutes until it’s pink.
Once the wine is cooked down, add a couple of tablespoons of pesto sauce to make it liquid
Drain the pasta and add the rest of the pesto sauce, mix it well.
Put it altogether in a big bowl or just serve it directly into individual bowls.
Add the rest of the grape tomatoes.
We prefer to serve the scallions on top of the pasta, you can always cook them with the meal too.
Add some parmesan cheese and parsley and serve with garlic bread/salad and you have a healthy meal ready for your family.
I have been known to make this with chicken too if I don’t have shrimp, it’s another great way to empty the fridge.
